Ingredients:

  • ½ Cup White Wine
  • Sea Salt & Black Pepper to Taste
  • ¼ Cup Olive Oil
  • 1 Onion, Chopped Fine
  • 1 Green Onion, Sliced
  • 2 Cloves Garlic
  • 2 Lemons, Juiced & Zested
  • 1 lb. Spinach, Fresh
  • ½ Cup Water
  • 4 Sea Bass Fillets
  • Lemon Slices for Garnish
  • 1/3 Bunch Dill for Garnish
  • 1 Tablespoon Olive Oil to Serve

Directions:

1. Start by heating your olive oil in a large skillet, placing it over high heat.

 

2. Chop your onion and green onion, placing it in your pan and sauté with garlic for three to four minutes. It should be lightly browned and fragrant. Season with salt and pepper, and cook for another minute. Make sure that you stir to avoid burning.

3. Pour in your wine, allowing it to sit for one to two minutes. This should give it time to evaporate, and then add in your lemon juice and lemon zest, stirring well.

 

4. Add in your chopped spinach and water, and then stir well. Allow it to cook for five more minutes.

 

5. Add in your fish fillets, and then season with olive oil and pepper. Cover, cooking for four minutes using medium heat.

 

6. Serve hot with dill and olive oil.
